Our 24-month old Prosciutto is a high-end product that looks great. The lean part features a nice red-pink colour, with the right tenderness and marbling. The fat is beautiful to look at and clean, it gives off a sweet scent. It all generates a delicate taste with the right balance of sapidity and sweetness. Plus notes of dried fruit and underwood, with an excellent overall structure and the right chewiness.

The taste and, above all, aromatic sensations are more evident in the 30-month curing, a distinctive consistency and flavour that can hardly be found in other hams, thanks also to the use of an excellent raw material. The exclusive curing developed by Vittorio Simonini makes it possible to identify in this ham perfectly recognizable flavours and textures. Uniform colour, compact flesh, accompanied by fragrance and a great balance of sweetness and sapidity, closes with elegant flavours and a fully clean palate that invites you to the next slice.
