BENEDICTO, THE LONG-AGED PROSCIUTTO

Born in Castrignano, a place suspended in time

Benedicto

Benedicto is the pinnacle of Simonini's production: Prosciutto di Parma taken to its longest aging, guided by the same time and patience that have shaped our work since 1968. Its name comes from an idea of care: a selection repeated again and again, stage after stage, choosing only the legs that deserve to wait a little longer.

Our prosciuttificio stands on a hill in Castrignano, among the woods of the Valparma valley, like a small castle: a place so beautiful that for almost a thousand years it was contested by bishops and noble families. Here the air is clean, and the natural microclimate creates ideal conditions for aging, surrounded by nature. Here our family grew up, today united in the same challenge: a craft quality that knows no compromise.
