WE STARTED IN 1968 AND WE ONLY MAKE PARMA HAM

Simonini was established in the mid-1960s by Vittorio Simonini, who together with his wife Angela and subsequently their children Roberta and Alberto, still carries forward the business on the pleasant hills of Langhirano overlooking the Valparma area, in the small and fairytale-like town of Castrignano.

The Valparma area is at the feet of the Tuscan-Emilian Apennines, Castrignano overlooks it from its 600 metres of altitude and has no industrial sites. The wind from the sea, which comes up here and fills the area, creates an ideal microclimate to cure and age our ham.

Once used for peasant activities, the valley has retained all its characteristics up to the present day. For those who come to Castrignano, time seems to have stopped to when man had to use his knowledge and intelligence to produce his income. And part of what he produced was for self-consumption, so it had to be unquestionably HEALTHY and GENUINE.

Just like then, this is what happens today here at SIMONINI, because our prosciutto is a real treat for the palate, with all the characteristics of an uncontaminated land on a human scale. A ham that conveys old traditions and gestures, just like the land where it is still made today.

Simonini is an artisan business that carried the old tradition of the most ancient form of NORCINERIA (pork butchery) up to the present day, reviving all the care and special conditions required to make Parma Ham outstanding and memorable.

This is done thanks to a careful selection of raw materials, slow and natural curing in our old, large cellars – all by following a scheduled set of targeted quality and production checks that are constantly updated.

All too often, there is a tendency to generalise a unique product like Parma Ham, in the mistaken belief that only because this is how it is called, all hams are the same.

ENHANCING THE VALUE OF THE LOCAL AREA AND RESPECT FOR THE ENVIRONMENT

Our company supports and tries to promote the local area, both from an economic point of view by generating tangible effects for the social and economical fabric where our Prosciutto is made and with care for the environment and sustainability.

A tangible and significant contribution to energy savings and environmental sustainability was provided with the creation, in 2011, of a photovoltaic system on the entire roof of the plant and the building with the offices.

We installed solar panels with high energy efficiency levels for the production of electricity and hot water for utilities. To wash the hams we set up a system that employs cold compressors already in operation, which allowed for considerable energy savings and an important reduction of CO2 (carbon dioxide) into the atmosphere. Respect for the environment, our present and future one, is essential to maintain health and physical well-being for ourselves and our children, as well as preserve the beauty of the environment where we live.

Respect for the environment and the promotion of the local area are part of our main values and this is why we heavily invested in cutting-edge technology and will continue to do so, also thanks to the trust that all our regular customers show us.
